Despite the premium pricing, demand remains strong among those desperate for a beef-like alternative.</p>

<p><span class="art_cus_secondary">Leah Gibbs</span>, who operates <span class="art_cus_secondary">Dry Branch Farm</span> market in Danville, Kentucky, sells ostrich cuts from Alpha Roost Farms and witnesses the emotional response firsthand. She reports that customers drive from all across the state to purchase the specialty meat.</p>
<p class="article_blockquote">&#8220;They are elated to have something that&#8217;s an alternative to beef,&#8221; Gibbs said. &#8220;I mean, it tastes exactly like beef.&#8221;</p>
<p>The <span class="art_cus_secondary">Alpha-Gal Association</span>, a nonprofit advocacy group providing online resources to people with the allergy, officially recommends ostrich as a dietary substitute that mimics the taste of beef.
